Mediterranean Stuffed Peppers
Enjoy a taste of the Mediterranean without having to leave your kitchen with these delicious peppers.
- 1 large halved and deseeded red pepper
- 1/2 orange pepper, chopped into chunks
- 60g couscous
- 6 chopped cherry tomatoes
- 2 tbsp chopped coriander
- A squeeze of fresh lime juice
- 60 crumbled feta cheese (optional)
This is our favourite way to enjoy peppers.
Heat the oven to 180°C.
Place the red peppers on a plate and microwave on medium for 5 minutes to soften. Place on a baking tray, cut-side up.
Meanwhile, place the couscous in a bowl and cover with 100ml boiling water. Stir, cover the bowl and leave to stand for 10 minutes. Add in the tomatoes, orange pepper, feta and coriander.
Sprinkle with a squeeze of lime juice.
Fill the mix into the pepper halves and bake for 10 minutes.
