1 large halved and deseeded red pepper
1/2 orange pepper, chopped into chunks
60g couscous
6 chopped cherry tomatoes
2 tbsp chopped coriander
A squeeze of fresh lime juice
60 crumbled feta cheese (optional)
This is our favourite way to enjoy peppers.
Heat the oven to 180°C.
Place the red peppers on a plate and microwave on medium for 5 minutes to soften. Place on a baking tray, cut-side up.
Meanwhile, place the couscous in a bowl and cover with 100ml boiling water. Stir, cover the bowl and leave to stand for 10 minutes. Add in the tomatoes, orange pepper, feta and coriander.
Sprinkle with a squeeze of lime juice.
Fill the mix into the pepper halves and bake for 10 minutes.
