Prawn Pad Thai

Pad Thai is Thailand’s signature dish for good reason, with it’s sweet and savoury vibes, it makes for the perfect Saturday night Fake away.

Ingredients

120g Thai Rice Noodles

30g Thai tamarind

1 tbsp Sweetener

2 tbsp Fish sauce

1 1/2 tbsp Oyster sauce

Spray oil

1/2 Onion sliced

2 Garlic cloves, crushed

200g Raw prawns

2 Eggs

Handful Beansprouts

30g Chopped peanuts

Lime wedges

Method

Cook noodles according to the packet instructions, rinse in cold water and set aside. Mix the whisked tamarind, sweetener, fish sauce and oyster sauce in a bowl, set aside.

In a large pan or wok, spray with oil and cook the onions and garlic for 30 seconds, stirring continuously. Add the prawns and continue to for a minute. Push the mixture to one side and add the eggs, and scramble. Then mix everything together in the pan.

Add in the noodles, beansprouts and sauce and toss together, heating through for about 2 minutes.

Top with peanuts and a wedge of lime, making sure to give the dish a good squeeze of the lime. Enjoy
