Cauliflower & Chicken Fried Rice

Ingredients

1 califlower

Low-cal spray oil

1/2 an onion, finely chopped

1 large egg

Salt and pepper

1 handful of mixed frozen veg

1 large chicken fillet, cooked and diced

A splash of soy sauce

Method

Place the florets of the cauliflower in a food processor and blend until it resembles a couscous texture.

Spritz a pan with low-cal spray and saute the onion.

Beat the egg in a bowl and add in a pinch of salt and pepper.

Pour the eggs into the pan and stir continuously.

Add in a handful of the frozen veg.

Add in the chicken, the “cauliflower rice” and a splash of soy sauce.

Stir together until the cauliflower rice is slightly crispy and serve.
