- 1 Large tub Low fat Greek Style Yogurt (less than 60kcals per 100g)
- Juice of 1 Lemon
- 1 Cucumber – peeled and cored
- 1 1 Garlic clove – minced
1 Place 2 sieves over 2 bowls. In one sieve, pour the tub of greek yogurt and allow any liquid to drain off.
2 Peel, core and dice your cucumber into very small cubes before adding to the second sieve. Sprinkle the cucumber with a little salt to help absorb any excess moisture. Leave the two bowls to drain off for 30mins – 1hr.
3 When drained, combine the ingredients in the sieves to another bowl, along with the juice of 1 lemon, 1 minced garlic clove and a liberal sprinkling of dill.
4 Serve with Falafal, or toasted tortilla pieces. Also great on spicy chicken dishes or as a topping on greek omelettes.
