Indian Chickpea Soup

Ingredients

low cal oil

1 large onion, chopped

1 tsp grated fresh root ginger

1 garlic clove, chopped

1 tbsp garam masala

850ml vegetable stock

2 carrots, quartered lengthways and chopped

400g tin canned chickpeas

100g green beans, chopped

Method

Spray the low cal oil into a medium saucepan and heat , then add the onion, ginger and garlic.

Cook for 2 mins, then add the garam masala, stir and give it 1 min more.

Add the stock and carrots. Simmer and stir for 10 mins, then add the chickpeas.

Stir in the beans and simmer for 3 mins.

Ladle into bowls and serve immediately.
