low cal spray
2 tsp paprika
1 onion, diced
2 garlic cloves, crushed
1 red pepper, finely chopped
1/2 tsp ground cumin
1/2 tsp chili powder
200g sweetcorn in water, drained
200g baked beans, no added sugar
4 wholemeal tortilla wraps
120g reduced fat cheddar, grated
30g rocket
4 tomatoes, diced
diced lime halves, to serve
Preheat grill to 180C
Heat some low cal spray in a saucepan over medium heat.
Add the paprika, chilli powder, cumin, onion, garlic & pepper cook for 3-4 mins until soft.
Add the sweetcorn and baked beans to the pan and cook for another 2-3 mins until the sauce thickens.
Spoon 1/4 of the mixture over each wrap then sprinkle with 1/4 of the cheese onto each.
Fold the wrap over, and place under the grill until cheese melts & tortillas are slightly browned.
Remove from the grill and cut the the wraps in half.
Top with rocket & tomato & serve with lime halves on the side.
