Veggie & Lentil Soup

Ingredients:

  • Low calorie spray oil
  • 2 stalks Celery (Chopped)
  • 2 Carrots (Chopped)
  • 1 Onion (Diced)
  • 4 cloves Garlic (Minced)
  • 3 Bay Leaves
  • 1 pint Veg OR Chicken stock
  • 1 x 3/4 cup Lentils
  • Fresh coriander leaves

Method:

In a large pot, add some low cal spray oil and gently saute the celery, carrots and onion for about 10-12 minutes.

Add the pint of stock along with  the garlic cloves, bay leaves and lentils. Simmer over medium heat for 30 minutes.

Remove from heat and blitz with a handheld blender.  Add some freshly chopped coriander leaves and serve.

NOTE: If want to add a little kick to your soup, add a chopped fresh red chilli.
