Veggie Bean Burger

Hands down, this bean burger recipe is the best one we've tried! It works very well the usual ketchup, mayo etc but we like it with some sriracha mayo and some mashed avocado. Bites worked out based on overall nutrition.

Ingredients

1 tin of black beans, drained and rinsed

1 small red onion, finely diced

2 garlic cloves, minced

1 tsp chipotles chili paste

2 tbsp lightest Mayo

1 tablespoon dark soy sauce

1 teaspoon ground cumin

½ teaspoon sea salt

½ teaspoon black pepper

1 egg

100g panko breadcrumbs

Spray Oil

4 Wholemeal buns

Method

In a large bowl, combine the beans, onion, garlic, chipotle paste, mayo, soy sauce, cumin, salt, and pepper. Use a potato masher or fork to mash until the mixture
holds together but still has some visible chunks of black beans.

Add the egg and use a spatula to fold until combined. Then, fold in the panko.Use your hands (use wet hands!) to form the mixture into 6 burgers. The mixture will be wet.. Pop in the fridge for 30 minutes to firm up.

Heat a large pan over medium heat. Spray with a little oil and cook the burgers for about 5 minutes per side, until charred on both sides, turning the heat down as
necessary. The exact timing will depend on the heat of your stove and cookware. Toast the buns on the pan or in your air-frier until slightly golden.

Assemble with burger with whatever you like. Guacamole would be great here with a homemade spicy mayo using sriracha and lightest mayo. We used tomatoes, cheese (allow 1 Bite) and lettuce and love your food with Unislim!

 

Delicious Tip- wrap the burger in tinfoil and pop back into a hot air-frier for 5 minutes before serving
