1 Onion, finely chopped
Pinch of Chili flakes
150g Basmati rice
2 Carrots, chopped
2 Garlic cloves, chopped
1 tsp Ground cumin
1 tsp Dried oregano
1 can Chopped tomatoes
600ml Chicken or turkey stock
200g Frozen peas
350g Cooked turkey, chopped or shredded
Salt and pepper
2 tsp Olive oil
Fresh coriander (to serve)
Serves 3
2 yums per serving
Heat the oil in a large pan. Add the onion and saute for 3-4 mins until soft.
Add the chopped tomatoes, garlic, cumin, oregano and stock.
Bring to the boil, then reduce the heat to a simmer and leave to cook for 20 mins, stirring frequently.
Stir in the frozen peas and shredded turkey and cook for a further 8-10 mins until both are cooked through.
Season and serve with some fresh coriander.
