Method

Ingredients:

  • 175g Tofu, cubbed
  • 2 tbsp Soy sauce
  • 1 tsp Mustard
  • 2 tsp Tomato Puree
  • 2 tsp Runny honey
  • 2 Courgettes, thickly sliced
  • 1 Red onion, cut into wedges
  • 1 Red or yellow pepper, cut into chunks
  • Low - cal spray oil
  • Handful of rocket
  • Balsamic Vinegar to drizzle
  • 1 tbsp Sweet chilli sauce

Method:

Marinate the tofu in the soy sauce, mustard, tomato puree and honey for about 10 minutes. Thread with the vegetables onto 4 skewers, Spray lightly with oil. Cook under a hot grill or on a barbecue for about 5 minutes, turning occasionally until cooked and slightly charred. Serve with rocket drizzled with balsamic vinegar, with sweet chilli sauce.
