1 tomato, cut into wedges
1/2 avocado, thickly sliced
1/2 lime, cut into wedges
60g quinoa (uncooked weight)
radishes, thinly sliced
1/4 red onion, thinly sliced
pomegranate seeds
garden peas
15g sesame seeds
cucumber slices
Serves 1
Cook the quinoa in boiling water for about 12 minutes or according to the packet instructions.
Drain and rinse under cold water.
Chop all ingredients and layer together with quinoa in a large bowl.
Serve cold with a sprinkle of sesame seeds, a drizzle of balsamic vinegar, salt and pepper.
