Smoked Salmon Salad

Whether you're an alfresco lunch gal or more of an aldesco hunzo, this smoked salmon salad is fantastic. It takes minutes to put together and is absolutely glorious. We like to cut the smoked salmon slices in very thin strips as this way, you're guaranteed to have some with every forkful. The thinly shaved onion cuts through the fat of the salmon and they are a match made in heaven. The tomato and cucumber add a freshness and a bit of crispness to the whole salad and all these tossed with a bit of spinach and maybe some capers if you're feeling extra, this is a lunch fit for a queen or in this case, if you use our measurements, you can feed 4 queens! If you are eating on the go, why not pack the salad into a mason jar and add the dressing at the last minute, you just have to close it back up, shake it and you've the perfectly dressed dish! Take your time and enjoy every single bite, if you can eat it away from the desk and take a break and the time to chew and chat. This is a killer combo and you deserve to savour every tasty morsel.

Ingredients

1 tbsp extra-virgin olive oil

1/2 tbsp fresh lemon juice

1 tbsp chopped dill

salt & freshly ground pepper

1 bag of baby spinach

10 thin slices of smoked salmon

1 medium cucumber - peeled, halved and sliced

4 radishes, sliced

handful of baby tomatoes cut in half

1/2 red onion sliced thinly

Method
  • In a large bowl, whisk the olive oil with the lemon juice and dill and season with salt and pepper.
  • Add the spinach, smoked salmon, cucumber, radishes, tomatoes, red onion to the bowl and toss well.
  • Transfer the salad to plates.  You can serve with some leftover baby boiled potatoes, just slice and mix through the salad or with some wholemeal bread.
