Salmon Burgers

Ingredients

500g salmon, boneless and skinless

1cm root ginger

1 tsp lighter than light mayonnaise

1 tsp soy sauce

1 small bunch of coriander, roughly chopped

2 chopped scallions

1 lemon, cut into 4 pieces

Method

Put the Salmon, chopped ginger, mayonnaise, coriander, scallions and soy sauce into a food processer.

Whizz it all together till it’s like a rough mince. Remove and shape into 4 burgers.

Using the oil spray, fry for 4-5 minutes a side till they are crispy and cooked through.

Serve with guacamole and lots of Forever Free veggies!
