1 orange, halved
1 lemon, halved
2 onions, peeled and chopped
3 carrots, chopped
4 sprigs of rosemary
Preheat your oven to 180°C
Spritz your turkey with low cal cooking spray, and season with salt and pepper. Make sure the turkey is completely covered by rubbing the salt and pepper in with your fingers.
Make a batch of our Christmas Spiced Stuffing.
With the stuffing place around half inside your turkey from the neck. Make sure not to overfill as it will affect your cooking time.
Turn the turkey around and place the rest of your stuffing into the larger cavity along with your orange, lemon, and rosemary.
Place your carrots and onion at the bottom of a roasting pan and put your turkey on top. Cover the turkey with tin foil.
Baste your turkey every 30 minutes with juices from the bottom of the pan. This will help lock in the moisture. Take off tin foil 20 minutes before it is cooked and allow the turkey to brown.
Cooking time for your turkey depends on weight and size. Ask your butcher for guidelines. Make sure all juices run clear before serving.
