Christmas Spiced Stuffing
Yummy stuffing with a twist. Try this with your Christmas spread.
- 1 stick celery, finely sliced
- 14 (112g) apricots dried
- 140g chestnuts
- 2 onions, chopped
- 2 cloves garlic, chopped
- 1.5 glasses white wine
- 112g fresh wholemeal breadcrumbs
- 1/2-1 tsp chinese 5 spice
- 1 tbsp chopped parsley
- Salt and fresh ground black pepper
Blanch the fresh chestnuts in boiling water for 2 minutes.
Drain and peel skins while hot and chop coarsely.
Dry fry onions and garlic in a non-stick pan until softened.
Add wine, celery, apricots and chestnuts.
Cook over a high heat for about 4 to 5 minutes stirring constantly.
Remove from heat and leave to cool.
Add breadcrumbs, spice, parsley, salt and pepper. Stir well.
Perfect for your Christmas day meal.
