Red Velvet Cake

Ingredients

280g porridge oats

2 tbsp cocoa powder

1 tsp bread soda

34g sweetner

2 eggs

600mls skimmed milk

1 tsp vanilla extracts

2.5 tbsp red food colouring

1/2 tsp white wine vineger

For the topping

1 tub of quark cheese

sweetener to taste

2 tsp vanilla extact

Method

For the cake

In a bowl add the porridge oats, cocoa powder and bread soda and mix them together.


In a  jug add the skimmed milk, eggs, sweetener, vanilla extract, red food colouring and white wine vinegar. Mix thoroughly and then add into oats and combine.

Pour into a lined loaf tin and bake for 40 minutes at 180C

For the topping

Mix the Quark and vanilla extract together and add sweetness to taste.

Allow the cake to cool before placing topping on.
