Rainbow Veggie & Turkey Pinwheels

Add a little colour to your lunchtime routine with these delicious roll ups.

Ingredients

2 pkts of Greene Farm Sliced Roast Turkey Breast

30g baby spinach leaves

30g purple cabbage, chopped

1/2 large carrot, chopped

1/2 red pepper, chopped

1/2 yellow pepper, chopped

4 x 10" wholemeal tortillas

120g extra light cream cheese

Method

Spread the cream cheese evenly over the 4 tortillas, leaving a 1-inch border on all sides.

Lay out 2 tablespoons of each vegetable in rows across the tortillas; top with Greene Farm Sliced Roast Turkey Breast.

Roll up each tortilla tightly. If the ends don’t stay shut you can add a bit more cream cheese to seal.

Cut crosswise into pinwheels and serve.
