60g Rolled or porridge oats
220ml Water
220ml Unsweetened Almond or soya milk with a pinch of salt
1 Tbsp peanut butter (no added sugar)
1 Tsp maple syrup
Mixed berries
4 Walnuts, chopped
Put the oats, water, milk and salt in a non-stick saucepan and stir with a wooden spoon over a low heat until the oats soften. Bring to the boil, stirring all the time, then reduce the heat and simmer gently for 2-3 minutes until the porridge thickens. It should be smooth and creamy. Remove from the heat and stir in the peanut butter and maple syrup. Sprinkle with the berries and nuts. Serve immediately
TIP: You can substitute cashew or almond butter for the peanut butter, and use skimmed milk instead of nut or soya milk.
