We love flipping pancakes! Try these delicious, healthy skinny pancakes fruit-filled for breakfast, topped with savoury goodness for lunch or sprinkled with sweetness for dessert. Our healthy recipe makes 10 skinny pancakes and are 0.5 Bites each. Enjoy!
- 120g plain flour
- 2 eggs
- 300mls skimmed milk
- low cal spray oil
For added goodness use local Irish free-range eggs!
Sift the flour in a bowl, add the eggs and slowly add the milk and whisk to a smooth batter. If you can leave the batter to sit for 30mins.
Spritz a pan with low cal spray oil and once hot add a ladle full of batter to coat the base the pan, ensuring that the mixture has spread evenly.
Once the batter looks dry on top and begins to brown at the edges, flip it over.
Cook for few seconds and serve immediately with your favourite toppings.
