One Pot Cheeseburger Pasta

Ingredients

360g pasta (rigatoni ideal!)

4 bacon medallions, chopped

700g lean minced beef

1 onion + 2 garlic cloves, finely chopped

2 Red Peppers

360g passata

1 tbsp smoked paprika

1 tbsp American mustard

1 tbsp Worcestershire sauce

tbsp xylitol or sweetener of your choice

1 litre beef stock

90g light Philadelphia

90g mature cheddar

Handful of chopped gherkins + fresh parsley 👌

Salt & pepper

Method

Under a low heat onion + garlic in some spray oil until softened, about 8 minutes.

Increase the heat, add the bacon and peppers and cook for a minute or two.

Add beef & brown it well

Stir in passata, stock, mustard, paprika, Worcestershire, xylitol

Tip in pasta and simmer till al dente

Stir in light Philadelphia and cheddar and voila! Creamy, cheesy goodness!

Stir in the gherkins, parsley and serve with a final shaving of cheddar or Parmesan
