Healthy Halloween Brack
A spooky healthy version on a Halloween classic

4 baking potatoes
4 juicy tomatoes, diced
1/4 red onion, diced
1 red pepper, deseeded and diced
1 red chilli, diced
2 tbsp chopped coriander
Juice of 1 lime
Salt & pepper
60g reduced-fat Cheddar, grated
Bake the potatoes at 200°C, gas mark 6 for 1 hour until tender.
Cut in half lengthwise and scoop out most of the flesh, leaving a thin layer inside each shell.
Mix the tomatoes, onion, red pepper, chilli, coriander and lime juice.
Spoon into the potato shells, season and sprinkle with cheese.
Pop under a hot grill until the cheese is bubbling.
