Grilled Chicken Caesar Salad

  • forever free caesar salad dressing
  • 1 head romaine or cos lettuce, leaves separated, washed and dried
  • 1/2 chopped cucumber
  • chopped in half cherry tomatoes
  • 4 skinless boneless chicken fillets
  • - Croutons: (Optional) -
  • Low Cal Spray Oil
  • 1 garlic clove
  • 2 slices thickly cut whole wheat bread


Firstly, you need to prepare your Caesar Salad Dressing.

Pre-heat the grill to a medium heat

Flatten the chicken with a mallet and season with salt and pepper.

Then toss the chicken breasts with 2 tablespoons of the Caesar dressing. Grill the chicken for about 15 minutes or until chicken is cooked through.

Croutons-  Spray the bread with low cal spray oil and grill, turning, until toasted for about 2 minutes. Then rub with the garlic clove.

Cut both the chicken and the bread into bite sized pieces.

Toss the lettuce leaves, tomatoes and cucumber in a bowl with as much Forever Free Caesar Dressing as you like and top with the grilled chicken and croutons!
