Ginger Chicken and Broccoli Stir Fry
Enjoy this delicious Chicken stir fry for dinner tonight. This recipe serves 4 and is free on plan!
- 400g Trimmed broccoli florets (about 12), halved
- 4 Chicken breasts diced
- 20g Ginger, finely chopped
- 1 Red onion, sliced
- 2 Bell peppers, cut into chunks
- Low cal spray
- 2 tsp Mild chilli powder
- 2 tbsp Lite soy sauce
- 240g Straight to wok noodles - cooked as packet instructions
Put the kettle on to boil and tip the broccoli into a medium pan ready to go on the heat. Pour the water over the broccoli then boil for 4 mins.
Heat the low cal spray in a non-stick wok and stir-fry the ginger, garlic, peppers and onion for 2 mins, add the mild chilli powder and stir briefly.
Add the chicken and stir-fry until cooked through.
Drain the broccoli and tip into the wok with the noodles and soy then cook until heated through.
