400g Trimmed broccoli florets (about 12), halved
4 Chicken breasts diced
20g Ginger, finely chopped
1 Red onion, sliced
2 Bell peppers, cut into chunks
Low cal spray
2 tsp Mild chilli powder
2 tbsp Lite soy sauce
240g Straight to wok noodles - cooked as packet instructions
Put the kettle on to boil and tip the broccoli into a medium pan ready to go on the heat. Pour the water over the broccoli then boil for 4 mins.
Heat the low cal spray in a non-stick wok and stir-fry the ginger, garlic, peppers and onion for 2 mins, add the mild chilli powder and stir briefly.
Add the chicken and stir-fry until cooked through.
Drain the broccoli and tip into the wok with the noodles and soy then cook until heated through.
