140g cooked & peeled prawns
Mixed salad leaves of your choice
1 Ripe avocado
1 Mango
1 Red chilli, decided and finely sliced
1 Lime, juiced
1 tbsp Extra virgin olive oil or avocado oil
1 tsp Honey
Bunch of coriander, finely chopped (optional)
Bunch of mint, finely chopped (optional)
Firstly, make your dressing by putting your oil, honey and lime juice into a jam jar and give it a good shake, season to taste.
Next toss all your ingredients together with your dressing in a bowl and mix well. Serve and enjoy with some crusty sourdough of your choice.
