4 Thin rashers lean back bacon, visable fat removed
Spray oil
2 Small free range eggs
1 Wholemeal English breakfast muffin or 2 mini pitta breads
2 tbsp
2 tbsp grated reduced-fat Cheddar cheese
6 Black Olives
A handful of rocket
Salt and freshly ground black pepper
Grill the bacon until it’s crisp and lightly browned. Drain on kitchen paper and keep warm.
Meanwhile, lightly spray a non-stick frying pan with oil and set over a medium heat. Break the eggs into the pan and fry until the whites are set. Pop under the hot grill to see the film on top of the yolks.
Split the muffin in half and lightly toast it. Or the pitta breads, if using. Spread each one with the ketchup and top of with bacon and fried eggs. Sprinkle the cheese over the top and flash under the hot grill to melt it.
Season lightly with salt and pepper. Garnish with the olives and some rocket and serve immediately.
