2 Fillet steaks (200g)
Spray Oil (preferably Olive oil)
Freshly milled pepper
Sea Salt
Allow the steak to come to room temperature for an hour. Pat dry with kitchen paper. Season the steak generously.
Heat a heavy based frying pan under your highest heat until its VERY hot.

Once cooked, wrap in tinfoil and leave to rest for 5-10 minutes. drizzle the resting juices over the steak, or add them juices to a pepper sauce
