Christmas Brussels Sprouts

Method

Ingredients:

  • 150g brussels sprouts
  • 2 bacon medallions
  • Wicklow Rapeseed 2 Cal Spray
  • freshly ground black pepper

Method:

Wash and peel the sprouts, then slice them up quite finely.

Make sure all the fat is removed from the bacon medallions, then dice them up, making sure they’re not too big.

Heat up a few sprays of Rapeseed Oil in a frying pan, then add the diced bacon. Cook for a minute or two on a high heat

Add the shredded sprouts, spray with some more Rapeseed Oil and continue to cook, stirring often for another 5mins.

Season with a bit of freshly ground black pepper and serve when the sprouts are just cooked through.
