Heuvos Rancheros

This traditional Mexican breakfast is an epic combo of spicy beans, creamy avocado, runny eggs and a spicy salsa. A perfect Sunday morning brunch

Ingredients

2 wholemeal tortillas or flatbreads

1 tin of refried beans (or black beans)

2 eggs

small handful cherry tomatoes, finely diced

1 small red onion, finely diced

2 garlic cloves, crushed

1 lime

small bunch fresh coriander

2 avocados

small handful (optional) Jarred jalepenos

40g feta, crumbled

Lime wedge to serve

Method

Firstly,combine the tomatoes, onion, garlic, juice of a lime and chopped coriander. Season to taste. This is called “pico de gallo” and is a mexican salsa that is delicious as a dip too. Refriderate and allow the flavours to mingle for 15 minutes at least

Warm your refried beans in the microwave. Slice your avocado, have your feta, some chopped coriander and jalepenos at the ready. Fry your eggs to your liking. Toast your flatbread on a hot pan. Transfer to a plate, top with the refried beans, Pico de Gallo salsa, your fried egg, avocado, feta and coriander. Dive in!
