2 Wholemeal muffins
4 Eggs
4tbsp 0% Greek style yoghurt
1/2tsp Mustard powder
The juice of a lemon
A pinch of cayenne pepper
A pinch of salt
In a hot pan, saute a handful of spinach for 2 minutes. Split and toast 2 wholemeal muffins. Poach 4 eggs to your liking. Make a hollandaise sauce by placing 4tbsps of 0% Greek style yoghurt, 1/2 tsp mustard powder, the juice of a lemon, a pinch of cayenne pepper, salt and pepper into a pan on a low heat, continuously whisking for 5 mins. Assemble the dish by placing the drained spinach on top of the muffins, topping each with the poached eggs and hollandaise sauce. Swerve with grilled tomatoes.
