Cheesy Mushroom Toasties

Mushrooms can help boost your skin's hydration levels while the healthy low GI carbs in wholegrain or wholemeal bread will release sugar more slowly into your bloodstream to provide energy throughout the day.

Ingredients

Spray oil

200g of white or chestnut mushrooms, sliced

4 x 30g slices of wholemeal or wholegrain bread

4 x 25g slices of reduced-fat sliced cheese, e.g. Swiss, Cheddar, etc.

Salt and freshly ground black pepper

Chopped parsley, to garnish

Method

Lightly spray a frying pan with oil and cook the mushrooms, stirring occasionally, over a low to medium heat for 5 minutes until tender and golden brown. Season to taste with salt and pepper.

Lightly toast the bread and cover with the cheese slices. Pop under a preheated hot grill until the cheese melts and starts bubbling.

Top with the cooked mushrooms and sprinkle with parsley. Serve immediately.
