200g of white or chestnut mushrooms, sliced
4 x 30g slices of wholemeal or wholegrain bread
4 x 25g slices of reduced-fat sliced cheese, e.g. Swiss, Cheddar, etc.
Salt and freshly ground black pepper
Chopped parsley, to garnish
Lightly spray a frying pan with oil and cook the mushrooms, stirring occasionally, over a low to medium heat for 5 minutes until tender and golden brown. Season to taste with salt and pepper.
Lightly toast the bread and cover with the cheese slices. Pop under a preheated hot grill until the cheese melts and starts bubbling.
Top with the cooked mushrooms and sprinkle with parsley. Serve immediately.
