Carrot Cake

Ingredients

150g porridge oats

2 tsp baking soda

2 tbsp ground cinnamon

3 large eggs

39g sweetner

2 large carrots, shredded

2 tbsp vanilla extract

5g desiccated cocnut

For the topping

1 tub quark cheese

2 tbsp vanilla extract

to taste sweetner

1 orange zest, grated

Method

This delicious carrot cake makes 12 portions at 1/2 a Bite each

For the cake:

Mix all of the dry ingredients together but leave the carrots until the end. Then mix all of the wet ingredients together.

Pour wet mix into dry mix and add the carrots.  Pour into a lined loaf tin and bake at 180 for 40 minutes

For the topping:

Wait for cake to fully cool. Add vanilla extract Sweetener and grated orange zest to quark cheese and spread generously over cake.
