2 Ripe Bananas, mashed
2 Eggs
1 pot Low Fat natural yogurt
200g Wholemeal Flour
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon or Vanilla Extract
50g Porridge Oats
2 tbsp Honey
Mash the bananas into a large bowl until smooth, add the honey and vanilla extract if you are using it.
In a smaller bowl, beat the eggs and add to the banana mix.
Sieve in the flour into a bowl, add the baking powder, cinnamon (if using), oats and yogurt. Mix all of the ingredients well, adding a drop of skimmed milk if you feel the mixture is too dense.
Spoon into muffin cases in a muffin tray and bake for approx. 20 minutes, until risen and golden brown.
Serve with low-fat yogurt and berries.
