Berry Pavlova

Ingredients

4 egg whites

120g caster sugar

1 tsp cornflour

1 tsp white vinegar

3 drop vanilla essence

low fat natural yogurt

berries, for topping

Method

Preheat oven to 130C.

Line a baking tray with grease proof paper.

Whisk the egg whites until they are stiff and form peaks.

Slowly add in the caster sugar, making sure you mix it well as its added.

Use a metal spoon to fold in 1 tsp cornflour, 1 tsp white wine vinegar and 3 drops of vanilla essence.

Spoon the meringue onto a prepared baking tray.

Shape into a 23cm circle, making it hollow in the centre.

Bake for 75-95 mins until the meringue is firm and crisp on the outside.

Cool thoroughly before removing greaseproof paper.

Top with yogurt and berries & serve.
