240g wholemeal pasta
450g lean beef
2 garlic cloves
1 onion, chopped
200g mushrooms, sliced
2 tbsp tomato puree
1 tsp dijon mustard
1 tsp paprika
a pinch of salt and pepper
230ml beef stock
(optional) chives
1 tbsp flour
Slice beef into strips, and heat a large skillet over medium-high heat. Spray low cal spray oil and sauté the beef for four minutes, or until browned.
Remove the beef, and sauté the onion, garlic & mushrooms along with the pepper, salt & paprika. Pour about 100ml of the stock into the pot and let it bubble away till it’s reduced.
Whisk 60ml of cooled beef stock and flour in a small bowl. Add the stock mixture, beef, tomato puree, dijon mustard and remaining stock to the pot. Cover and let it simmer for 40 mins
Cook the pasta as per normal, drain and serve with the beef. To ensure the perfect plate have with a healthy mixed leaf salad or some mixed vegetables. Chop a few sprigs of chive and sprinkle on top to garnish
