1 Red onion, peeled and chopped
1 Garlic clove, peeled and chopped
4 tbsp Parsley
2 tbsp Sage
4 Dried apricots
6 slices Brown bread, crusts removed
2 Lightly beaten eggs
Preheat oven to 160℃.
Add bread slices to the food processor and blend until slices are crumbs.
Remove from processor and add to a bowl.
Add the onion and garlic into the food processor, along with the apricots and herbs and blitz until finely chopped.
Add the breadcrumbs back into the processor, with a pinch of salt and blend again until mixed.
Set the processor to a low speed and add the egg, blending until well mixed together.
On a chopping board, take the mixture out in handfuls and roll into small balls (around 5cm in diameter)
Place on baking tray and bake for 25 mins or until cooked through.
