1 Onion, chopped
3 Garlic cloves, crushed
2 Carrots, grated or cubed
2 tins of Tomatoes (best quality)
1 Chicken or Veg stock cube
1 Tbsp Italian Herbs seasoning
Pinch of chilli flakes (optional)
Fresh basil
Spray a pan with olive oil. Add in your garlic, onion and carrot and cook under a very low heat until soft, about 10-15 minutes, stirring regularly to avoid
burning. Add a splash of water if the pan becomes too dry
Add in herbs, chilli if using, tomatoes, and fill one of the tins with water and add it in, also add the stock cube. Bring to the boil.
Reduce the heat and simmer gently for 20 minutes, season and add plenty of fresh basil when serving.
