100ml Milk / Almond Milk
650g Floury white potatoes, peeled and cut into chunks
2 tbsp Light Mayonnaise
Sea salt and freshly ground pepper
Parsley, to serve
Put the potatoes in a medium saucepan with cold water to cover.
Bring to boil then add 1 teaspoon of salt and reduce the heat and simmer for 15 to 20 minutes, until the potatoes are very tender.
Drain and mash the potatoes well.
Stir in the mayonnaise and milk and heat gently, stirring until the mixture is smooth.
Season the potatoes with salt and pepper.
Top with some parsley and serve hot.
