Enjoy this superb meat free bolognese. This could easily become a family favourite!
- 250g mushrooms (stemmed and chopped)
- 1 garlic clove
- 1 yellow pepper (diced)
- 1 red pepper (diced)
- 1 red onion (finely diced)
- 1 carrots (grated)
- 1 can chopped tomatoes
- 240g spaghetti
- 1 tsp oregano
- 1 tsp basil
- salt & pepper
Spray a large frying pan with Sussed rapeseed spray oil and heat to a medium heat. Add the onions and garlic and stir fry for 2 – 3 minutes.
Next add in the peppers and mushrooms and stir fry for a further 2 -3 minutes.
Next add in the grated carrot, chopped tomatoes, oregano and basil and mix well. Turn the heat to low and leave simmering for 10 minutes.
Meanwhile cook the spaghetti according to the packet instructions in lightly salted boiling water.
In four large bowls layer up the spaghetti topped with the veggie bolognese.
Add some freshly grated parmesan for some extra bites.
