Ingredients

low cal oil

2 carrots, chopped

1 large onion, finely chopped

1L vegetable stock

400g canned chopped tomatoes

200g frozen peas & sweetcorn

240g (uncooked) pasta

basil leaves (handful)

60g parmesan, grated (optional)

Method

In a saucepan cook pasta as per instructions, then drain and rinse off starch.

While the pasta is cooking, gently fry off the carrots and onion in a saucepan over medium heat for 5 mins until starting to soften.

Add the stock and tomatoes to the saucepan, then simmer for 10 mins. Add the peas & sweetcorn and cook for another 5 mins.

Once veg is tender, stir in the pasta.

Simmer for 5 mins until the pasta is just cooked and soft.

Stir in the basil, season, then serve in bowls topped with a sprinkling of Parmesan.

To turn this into a perfectly rounded meal you could add some protein such as torn chicken or chopped lean ham and voila, you’ve got a quick and handy dinner.
