Unislim Christmas Pudding

A yummy guilt free Christmas pudding

  • 90g currants
  • 90g Raisins
  • 4tbsp Brandy/Rum
  • 90g Glace Cherries - halved
  • 90g Plain or self raising flour
  • 1/2 tsp Mixed Spice
  • 1/2 tsp Cinnamon
  • 60g Brown Sugar
  • 60g Breadcrumbs
  • 2 tsp Gravy Browning
  • 1/2 Zest of Lemon and Lime
  • 110g Apple - grated
  • 1 tsp Lemon juice
  • 2 Eggs
  • 4 tbsp Skimmed Milk
  • 2 tbsp Molasses or syrup

Soak the dried fruit in alcohol and leave over night.

When ready to make pudding, toss cherries gently in flour; add spices, breadcrumbs, sugar and browning.

Mix zests, apple and carrot together with fruit.

Beat eggs with milk and molasses and add to mixture, stirring well.

Place in 2 pint oven proof pudding bowl, cover with foil or cloth and steam gently for 3 hours.

After cooking allow to cool.

Wrap in foil and store until required.

Steam for 1 – 2 hours to re-heat.
