Unislim Christmas Pudding
A yummy guilt free Christmas pudding
Overnight soaking plus 20mins
- 90g currants
- 90g Raisins
- 4tbsp Brandy/Rum
- 90g Glace Cherries - halved
- 90g Plain or self raising flour
- 1/2 tsp Mixed Spice
- 1/2 tsp Cinnamon
- 60g Brown Sugar
- 60g Breadcrumbs
- 2 tsp Gravy Browning
- 1/2 Zest of Lemon and Lime
- 110g Apple - grated
- 1 tsp Lemon juice
- 2 Eggs
- 4 tbsp Skimmed Milk
- 2 tbsp Molasses or syrup
Soak the dried fruit in alcohol and leave over night.
When ready to make pudding, toss cherries gently in flour; add spices, breadcrumbs, sugar and browning.
Mix zests, apple and carrot together with fruit.
Beat eggs with milk and molasses and add to mixture, stirring well.
Place in 2 pint oven proof pudding bowl, cover with foil or cloth and steam gently for 3 hours.
After cooking allow to cool.
Wrap in foil and store until required.
Steam for 1 – 2 hours to re-heat.
