Healthy Halloween Brack

90g currants
90g Raisins
4tbsp Brandy/Rum
90g Glace Cherries - halved
90g Plain or self raising flour
1/2 tsp Mixed Spice
1/2 tsp Cinnamon
60g Brown Sugar
60g Breadcrumbs
2 tsp Gravy Browning
1/2 Zest of Lemon and Lime
110g Apple - grated
1 tsp Lemon juice
2 Eggs
4 tbsp Skimmed Milk
2 tbsp Molasses or syrup
Soak the dried fruit in alcohol and leave over night.
When ready to make pudding, toss cherries gently in flour; add spices, breadcrumbs, sugar and browning.
Mix zests, apple and carrot together with fruit.
Beat eggs with milk and molasses and add to mixture, stirring well.
Place in 2 pint oven proof pudding bowl, cover with foil or cloth and steam gently for 3 hours.
After cooking allow to cool.
Wrap in foil and store until required.
Steam for 1 – 2 hours to re-heat.
