1 onion, finely chopped
2 garlic cloves, crushed
2 celery sticks, finely chopped
1 carrot, finely chopped
2 courgettes, diced
2 tin of green lentils, drained
2 tins of tomatoes
2 tbsp tomato puree
2 tbsp Italian seasoning
1 vegetable stock cube
1 tsp marmite (optional)
Parmesan or vegetarian cheese to serve
In a large saucepan sprayed with oil, add the onion, garlic, carrot and celery. Cook under a medium heat for 10-15 minutes or until the vegetables are nicely soft. Turn up the heat and add the courgettes, lentils, tinned tomatoes, stock cube crumbled marmite if using and herbs. Bring to a simmer and allow to bubble and reduce for 20 minutes. Season to perfection before serving with your fav pasta and some freshly grated Pecorino (vegetarian) or Vegan parmesan
