1 onion
1 pepper
3 garlic cloves
1/2 jalapeno peppers
1 tbsp curry powder
1 tsp ground coriander
200g chicken stock
400g cooked turkey
200g frozen peas
chopped coriander
salt and pepper
Place the onion and red pepper in a food processor and pulse until just chopped.
Add the mixture to a large pot with a little water and simmer until soft.
Meanwhile, put the garlic cloves, ginger and jalapeño peppers into the processor and whizz together.
Add this mixture to the large pot, along with the curry powder and ground coriander and stir for about 2 minutes.
Add the chicken stock and bring the mixture to a simmer for about 10 minutes. Add the cooked turkey, frozen peas, chopped coriander and lime juice and simmer until heated through, about 5 minutes.
Season with salt and pepper.
