Tomato, Mozzarella & Pine Nut Salad

This dish works great with tinned tuna and/or ½ cup of leftover pasta for an extra filling meal

2 large vine tomatoes, thickly sliced

120g large mozzarella ball, thickly sliced

50g rocket leaves

30g pine nuts

1 tbsp extra virgin olive oil

1 tsp balsamic vinegar

salt and pepper to taste

Method

Arrange rocket leaves on large plate/bowl. Place the sliced tomato and mozzarella on top. Season well and drizzle the oil and vinegar over. Sprinkle with pine nuts and enjoy.
