1 Orange and lemon, zest of 1/2
Thyme, chopped
2 tbsp Olive oil
Seasoning
Turkey, ready for oven
2 Bay leaves
Finely grate orange and lemon zest into a small bowl, mix with chopped thyme, 2 tbsp olive oil and seasoning.
Mash and mix together. Baste the turkey with the mix.
Season the turkey with salt and pepper, inside and out.
Halve the orange and lemon and put in the cavity (squeezing as the fruit goes in) with the thyme branches and two of the bay leaves.
Cook as per weight instructions.
Serve with roast potatoes and steamed vegetables.
