8 Chicken fillets, fat and skin removed
4 cloves Garlic, chopped
1 Courgette, shredded
30g Parmesan, grated
60g Low fat cream cheese
1 Lemon juice
2 tsp Paprika
4 slices Pancetta Ham
10 Vine or cherry tomatoes
Serves 4
1 yum per serving
Preheat the oven to 200°C/180°C fan/gas mark 6.
Lightly spray a baking dish with cooking spray and season the chicken with salt and pepper.
Add spray into large frying pan over a medium heat and cook the garlic for one minute.
Stir in the courgette, Parmesan and some seasoning.
Set aside to cool, when cool add the cream cheese and mix to combine.
Lay chicken fillets down on a board and spread three tbsp of courgette mixture on each fillet. Loosely roll each one and keep the seam side down. Wrap the chicken in a slice of lean pancetta ham to hold it together.
Combine the lemon juice, paprika and some spray oil in a bowl and drizzle on the outside of the chicken.
Place the fillets in a baking dish, along with sliced cherry or vine tomatoes and cook for 30 mins until cooked through.
