4 Chicken breasts
1 Lemon
2 tbsp Fresh Thyme Leaves
4 teaspoons Clear Honey
Mixed Peppers
Red onion
Couscous
Place the chicken into an oiled, pre-heated dish under the grill. Season with salt and pepper and grill for 5 minutes. Cut 4 thin slices from the lemon.
Turn the fillets over and place the lemon slices on top, sprinkle the thyme and drizzle the honey over. Squeeze the juice from the remaining lemon all over the chicken breasts.
Grill for 10 more minutes until golden brown and serve in the sticky juices. Roasted peppers and red onion are the perfect accompaniment to this dish and for an even more Mediterranean feel, fill a quarter of your plate with some free to choose couscous.
