Spicy Pork Chops with Sweet Potato & Spinach Mash

Ingredients

4 pork chops

2 tbsp of reduced salt soy sauce

1 tbsp of grated fresh ginger

1 red chilli, deseesed and finely chopped

2 tsp honey

2 tsp olive oil

400g sweet potato, quartered

200g baby spinach

Method

Place the soy sauce, oil, ginger, chili and honey into a large bowl, immerse the pork chops and allow to marinade for 10 to 30 minutes.

Meanwhile, steam the sweet potato. During the last two minutes of steaming, add the spinach.

Grill or fry the pork chops for 3-5 mins on each side until they are done to your taste.

Mash the sweet potato, stir in the spinach and serve the chops on top of a bed of mash.
